New Hampshire prides itself on its seafood: not only lobster, but also breaded haddock, steamed mussels, fried clams, and fish-and-chips. Across the state you'll find country taverns with both old-school and increasingly diverse modern American menus, many of them emphasizing regional ingredients—in smaller hamlets, the best restaurant in town is often inside the historic inn. As in the rest of New England, the state has no shortage of greasy-spoon diners, pizzerias, and pubs that serve hearty comfort fare, but a growing number of contemporary, locavore-driven bistros, third-wave coffee roasters, mixology-minded cocktail bars, and artisanal craft breweries have cropped up in recent years—along with a growing selection of Asian and other ethnic restaurants—especially in Portsmouth, Manchester, and Concord, but also in some surprisingly little towns, such as Keene, Walpole, Bethlehem, and Walpole. No matter where you go, reservations are seldom required, and dress is casual.
