Panoramic windows, a huge Botero statue as a centerpiece and a smattering of the master's paintings convey a sense of tasteful luxury inside this circular steak house overlooking the Encore pool area. Enjoyment of Chef Mark LoRusso's contemporary preparations of beef, poultry, and seafood is enhanced by the skilled, attentive service of the waitstaff. Enticing starters might include Dungeness crab ravioli, a prosciutto tasting with grilled peach panzanella, or baby-beet salad with warm chèvre. Of course, there are several steaks to choose from, with your choice of Botero steak sauce, béarnaise, chimichurri, or jalapeño hollandaise. Consider sharing the porterhouse for two, with a side of truffle mac and cheese.
