Defining much of Kansas’s dining scene is a casual, anything-goes atmosphere where the true focus is on the food. This includes attire: jeans and a clean shirt are considered acceptable. Many artisanal-food producers distribute their crops to bed-and-breakfasts and cafés, making it likely that you’ll sample the state’s foods during your stay without even trying. Vegetarians might find menu selections challenging, but that is changing in many communities, and not just in the college town of Lawrence, where salads and meatless entrées are now listed proudly alongside ribs and burgers on a menu.
