The routes run through Baja backcountry, where you have the opportunity to explore the Cape's rarely seen back roads while learning desert lore from a knowledgeable guide-cum-biologist. One option takes you to a remote mountain ranch before lunching and snorkeling at Cabo Pulmo. Day trips may include anything from hiking and snorkeling to city tours and turtle release programs (August to November). Baja Outback also offers multiday tour packages especially designed for kids with boogie boarding and sand castle building. For adventure-driven vacationers, tours include kayaking, surfing, and stand-up paddle boarding. San José del Cabo, Baja California Sur, 23450. 624/142–9215. www.bajaoutback.com.
