Markus Neff presides over this gourmand's paradise in the Waldhotel Fletschhorn. The vibe is innovative, the flavors are superb, many ingredients are local, and dishes rotate seasonally. You can order à la carte, but to fully appreciate the chef's talents, try a tasting menu for 180 SF or 210 SF, which includes a fabulous cheese cart. Lunch, served noon–5, is a great time to sample the gourmet team's talents at a more favorable price. Mains start at 25 SF, and the lunch menu, including starter, main, dessert, glass of wine, and coffee, runs 90 SF. The expansive wine bar stocks some 45,000 bottles, including many local Valaisan wines that match the cuisine's high style.
