The medieval fortress thought to have inspired the tale of Sleeping Beauty was renovated after a fire into a family-run hotel, complete with domed turrets and spiral staircases. Sitting on the crest of a hill, surrounded by a forest of ancient oaks that is populated with wild deer and boar—and with the tower rooms' four-poster beds and spa baths—the castle is an understandably popular spot for weddings and honeymoons. Game and fresh trout are served in the excellent restaurant, which also specializes in rose-themed dishes, including pasta and desserts made with the flowers.
