A pair of stone stairways leads up to the elegant dining room, with black-and-white marble floors, chandeliers with ruby-red shades, and a 1901 Steinway piano. The extravagant seven-course tasting menu ($125) might include foie gras with maple berry glaze, pan-seared scallops with asparagus risotto, or poached chillo (red snapper) with apricot gnocchi. Adding Caribbean accents to classical French cuisine, the à la carte menu changes weekly but might include roasted rack of lamb and wahoo (a kind of mackerel) in a pistachio crust. Dress is formal by island standards, except in the downstairs Blue Room, with a similar menu. Lunch (dessert and after-dinner drinks often, too) is served on the terrace to the crash of the waves.
