Fodor's Expert Review Hibernia Restaurant and Art Gallery
Creative dishes are served in this wood-beam cottage restaurant overlooking the water at Anguilla's eastern end. The tables in the intimate dining room face a Balinese-style pool with a fountain, sure to inspire relaxation during dinner. Unorthodox yet delectable culinary pairings—inspired by chef-owners Raoul Rodriguez and Mary Pat's annual travels to Asia—bring new tastes and energy to the tables. Local organic products are used whenever possible. The island's popular crayfish, cooked out of the shell with Asian mushrooms and oven-dried heirlooms is sure to please. The owners' passion for life is expressed through the vibrant combination of setting, art, food, unique tableware, and thoughtful hospitality. A shuttle service, starting from $15 per person, is available, a good idea if you plan to enjoy the stellar wine collection at dinner.
Mary Pat stocks the tiny art gallery here with amazing, and reasonable, finds from her travels.
